Rigid containers only — Never use flexible or collapsible packaging. A sturdy cake box or a rigid plastic container with a secure lid is essential. The cake should not be able to slide around inside.
Non-slip base — Place a non-slip mat or damp paper towel under the cake to prevent sliding. Some people use a small dot of buttercream or melted chocolate to "glue" the cake board to the box base.
Clearance above the cake — Make sure the lid doesn't touch the top of the cake. Jelly surfaces are sticky and will adhere to anything that touches them.
Size-appropriate box — Too much space allows the cake to shift; too little risks crushing decorations.
Temperature Control During Transport
This is the most critical factor:
Insulated bag or cooler — Place the boxed cake inside an insulated food delivery bag or a small cooler. This maintains cold temperature for 1-3 hours depending on the ambient heat.
Ice packs — Place gel ice packs around (not on top of) the cake box inside the insulated bag. Wrap ice packs in a cloth to prevent condensation from dripping onto the cake.
Avoid the car trunk — The trunk is the hottest part of a car. Always place the cake on the back seat or the floor of the passenger area, preferably with the car's AC directed towards it.
Pre-cool the car — In summer, run the AC for 5-10 minutes before placing the cake in the vehicle.
How Long Can a Jelly Cake Survive Outside the Fridge?
Under ideal conditions (air-conditioned room at 20-22°C):
2-4 hours — Safe for display and serving.
4-6 hours — May start showing signs of softening, especially at the edges.
6+ hours — Not recommended. Surface may become tacky, and in warm environments, the structure begins to fail.
In hot conditions (above 28°C without AC):
30-60 minutes is the safe maximum for transport.
The cake should go from fridge to insulated bag to destination fridge as quickly as possible.
Car Transport Tips
Drive smoothly — Avoid sudden braking, sharp turns, and speed bumps where possible. The jelly will wobble with momentum.
Flat surface — Ensure the cake sits on a completely flat, stable surface. The car floor is often more stable than the seat.
Seat belt the box — If placing on a seat, use the seatbelt to secure the box and prevent it from sliding.
Short trips — Keep transport under 30 minutes when possible. For longer distances, use more ice packs and check the cake upon arrival.
Delivery Distance Limits
For home-based jelly cake businesses:
Under 20 minutes drive — Standard packaging with ice packs is sufficient.
20-45 minutes — Extra ice packs, fully insulated container, and AC on full during the drive.
45+ minutes — Consider whether delivery is feasible. Some jelly cake makers set a maximum delivery radius for this reason.
Shipping (overnight) — Generally not recommended for jelly cakes. The risk of temperature fluctuation and physical impact is too high.
What to Do If It Starts Melting
If you notice your jelly cake softening during transport:
Get it into a fridge immediately — even a convenience store fridge in an emergency.
Don't panic — Minor softening is often reversible. Jelly re-sets when cooled. Place it back in the fridge for 1-2 hours.
Surface condensation is normal when moving from cold to warm environments. Gently blot with a paper towel — don't rub.
